José Andrés Group’s Penn Quarter restaurant draws on the urban energy of Mexico City, but its most concrete point of interest is the work behind the tortilla. The current menu says the kitchen cooks and grinds heirloom Mexican corn in-house each day for its masa.

That foundation changes how to read the taco section. Each taco is an individual order, allowing a diner to compare fillings instead of receiving a fixed assortment. Slow-cooked pork with achiote and sour orange points toward Yucatán; grilled cactus offers a plant-centered route; sautéed grasshoppers introduce a preparation associated with Oaxaca.
