About Fiola
At Fiola, Italian cooking is presented as an organized journey through ingredients and regional traditions. Fabio Trabocchi founded the Penn Quarter restaurant in 2011; the current kitchen is led by executive chef Antonio Mermolia. The menu architecture makes their approach visible. Meat, fish and vegetables each have a named tasting itinerary, while the extended Brumidi sequence draws its name from the artist whose frescoes decorate the U.S. Capitol.
That structure gives the diner a meaningful choice before individual dishes arrive. The vegetable-centered Verdi menu places produce at the heart of the occasion, rather than treating it as a substitution on the edge of a meat-led dinner. The longer Brumidi format takes a wider view. Fiola also publishes a shorter sequence and a separate à la carte menu, so the restaurant’s identity should not be reduced to its most elaborate offering.
Handmade pasta is an important bridge between those formats. The published menus include pasta filled with roasted cauliflower and buffalo mozzarella, and another preparation built around duck cooked in the Genovese style. These examples show a kitchen using familiar Italian references as material for a carefully composed plate. They are examples of current menu direction, not promises that a particular seasonal preparation will remain unchanged.
Fiola suits a diner who wants the restaurant to shape the progression of the meal and who regards wine or a nonalcoholic pairing as part of that experience. Someone whose interest is principally a bowl of pasta can take a different path through its à la carte service. The distinction matters: the same kitchen can support both a formal culinary itinerary and a more selective dinner, but they are different ways of experiencing it.
