Tratto
Chris Bianco’s seasonal Italian trattoria returned to Town & Country in 2025, linking pasta and produce with its Southwestern setting.
About Tratto
Tratto’s return to Town & Country is a useful chapter in Phoenix’s Italian dining story. Chris Bianco’s restaurant first opened there in 2016, moved to the former Roland’s Market building in 2020, and returned to its original home in September 2025. The present restaurant describes itself as a modern interpretation of the Italian trattoria, grounded in the relationships between growers, kitchen, staff and guests. For someone arriving with memories of the larger downtown location, that return matters: the current dining experience belongs to the Town & Country setting.
Seasonal cooking is central to the idea. The restaurant’s own summer examples include mafaldine with saffron-seasoned sweet corn, confit cherry tomatoes and basil, and stone fruit over pistachio butter with Mexican tarragon and honey. These are examples of its changing repertoire, rather than a fixed menu promised throughout the year. They show how an Italian pasta form can carry Southwestern and seasonal references without needing a heavy sauce. The fruit preparation makes a related point: what comes from growers can lead the composition, with other ingredients supplying contrast. The kitchen currently identifies Christa Chase and Jose Flores as chefs de cuisine and Bethany Farnell as pastry chef.
Tratto is best approached as a seasonal dinner rather than as an extension of the neighboring pizzeria. A table interested in pasta, produce and the way ingredients are combined has a clear reason to choose it. Reservations are recommended, and walk-ins are also welcomed. Its attraction is the trattoria model interpreted for this city: a restaurant with an established culinary family behind it and a menu responsive to place and season. That makes the return to its original home more than a change of address; it restores the restaurant’s founding setting while leaving its cooking open to new combinations.
