Kalaya carries Nok Suntaranon’s Southern Thai roots into a shared meal in Fishtown. The restaurant takes its name from her mother, whose market stall in Trang helped shape the chef’s approach to food and hospitality. It began as a small South Philadelphia restaurant in 2019 before developing its present setting. In 2026, Kalaya won the James Beard Foundation’s Outstanding Restaurant award. That recognition provides context for the kitchen, while the menu explains more directly what a diner will find: shaped dumplings, curries, wok preparations and plates intended to meet around the same table.

The dumplings give the meal a distinctive opening. Kanom jeeb nok are shaped like birds and filled with caramelized cod and preserved radish; shaw muang take a flower form around ground chicken. Their construction leads into a broader range of textures and techniques. Goat-and-lamb curry combines the restaurant’s spice blend with toasted coconut, while charcoal-grilled chicken brings coconut cream, turmeric and soy into its glaze. The current menu also includes dry red curry with crisp tofu and vegetables, offering a different route through a meal whose character comes from more than one central protein.
