About Ma Der Lao Kitchen
Ma Der Lao Kitchen starts with an invitation. Its name is a Lao expression urging someone to come and eat, and chef Jeff Chanchaleune built the restaurant around food learned from his mother, grandmothers and father. After years working with Japanese cuisine, he returned to the dishes that had shaped family meals. In Oklahoma City’s Plaza District, that background becomes a menu designed for sharing, with sticky rice acting as a companion to the dishes rather than an incidental side.
Nam khao offers one clear introduction to the kitchen: crisp rice is mixed with cured pork sausage, herbs, lime, chili and peanuts, with lettuce alongside. The dish puts crunch and acidity together. Laab gai takes a different path through minced chicken, fish sauce, lime, herbs and toasted rice powder, while the house-made Lao sausage brings a savory, herb-forward pork preparation to the table. Ordering across those contrasts is more revealing than simply choosing several grilled or fried dishes. Sticky rice helps connect them, and the chili dips provide another layer of flavor.
There is considerable nuance beyond the best-known selections. Catfish is steamed with noodles and aromatics in a banana leaf, and a mushroom-based laab is explicitly vegan. The mushroom stew, however, uses chicken broth, a useful distinction for anyone ordering by ingredients rather than by the title of a dish. Papaya salad offers several stated spice levels, so the whole meal need not be governed by one assumption about heat. Ma Der is a good introduction to Lao cooking for a table willing to share and compare; its personality comes from the family repertoire and the relationships between rice, herbs, sourness and savory seasoning.
