Bar Sen

Bar Sen gives chef Jeff Chanchaleune’s family-food story a different center of gravity. Opened in February 2025 beside Ma Der Lao Kitchen in the Plaza District, the restaurant is built around noodles and cocktails. Its defining bowl, khao piek sen, is the chicken noodle soup the chef identifies with childhood. In 2026, the James Beard Foundation named him a Best Chef: Southwest nominee for Bar Sen, recognition that adds context without turning the restaurant into an award trophy or obscuring its everyday comfort-food purpose.

The soup explains the kitchen more clearly than a general claim about authenticity. Handmade rice noodles sit in chicken stock seasoned with fish sauce, alongside pulled chicken, quail eggs, herbs, garlic oil and fried shallots. The menu also offers a vegan version with vegetable broth and tofu. Someone who wants a different register can move to OG Lao Khao Soi, combining pork broth, wide rice noodles, minced pork, tomatoes and lemongrass. These are distinct bowls, not interchangeable variations on a generic noodle soup.

Small dishes and the bar widen the possibilities. A scallop crudo brings coconut milk and fish sauce together with lime and herbs; chicken kara-age uses a coconut marinade and toasted-rice seasoning. A Thai Tea Old Fashioned or a green-curry Margarita carries the kitchen’s aromatics into cocktails, while a hibiscus-and-lemongrass lemonade supplies a nonalcoholic alternative. The pandan cinnamon roll makes dessert part of the same conversation. Bar Sen suits someone who wants a personally chosen noodle bowl plus a few shared dishes, or a casual date centered on food and drinks. It offers a different experience from Ma Der’s communal sticky-rice meal while remaining connected to the same chef’s culinary memories.
