Don Artemio Mexican Heritage brings a regional point of view to Fort Worth’s West Seventh dining corridor. Its roots are in Saltillo, Coahuila, and the restaurant frames its cooking around northeastern Mexico, interpreted with contemporary technique. That origin is visible in the room as well as the menu: clay brick, textiles associated with Saltillo and references to Coahuila’s wine culture give the setting a connection to the place from which the concept developed.
Chef and creator Juan Ramón Cárdenas has devoted particular attention to cabrito, including his work as the author of La Senda del Cabrito. The current kitchen identifies Rodrigo Cárdenas as culinary director and Marcial Riojas Lucio as chef de cuisine. Its dinner menu offers slow-braised kid goat and confit ribs with handmade blue-corn tortillas, making that specialty a concrete starting point for understanding the restaurant. Fried nopales, prepared with bacon and offered with a vegetarian option, provide another recognizable link to its northeastern Mexican focus.
The menu travels beyond one region without losing that foundation. Enchiladas with tamarind mole, fish with Oaxacan mole negro and a puff-pastry-wrapped poblano filled with cheese and pecans show how sauces and contrasting textures organize the cooking.
