Fait Maison French Restaurant

Fait Maison takes its name seriously: the French expression means made in the house, and the restaurant describes its own stocks, sauces and daily bread baking as the foundations of the kitchen. Olivier and Susan Bouzerand’s restaurant is in Edmond, a separate city north of Oklahoma City, across from the local history museum and Stephenson Park. It opened in 2017 after the renovation of a former menswear shop. That setting gives the restaurant a specific local story rather than making it an anonymous special-occasion dining room.

The indoor menu is distinctly classical. Quail appears as a galantine with foie gras and black truffle, as quenelles with onion velouté, and as a roasted breast with verjus sauce. The Dover sole preparation follows a Norman vocabulary of white wine, mussels, shrimp, mushrooms and cream. For a diner, these are signals of a kitchen that builds a meal through stocks, accompaniments and multiple treatments of an ingredient. They suit someone who enjoys French technique and substantial composed dishes more than a quick order built around a single grilled item.

Bread and cheese carry that approach beyond the main course. The house describes a baguette, a raisin-and-walnut wine bread and a potato-and-bacon bread; a trolley of French raw-milk cheeses can follow the savory courses. A sommelier service and a cellar ranging beyond the best-known labels support a dinner organized around wine. Despite the formal culinary language, the restaurant explicitly imposes no dress code. Fait Maison therefore makes sense for an anniversary or a deliberately unhurried dinner in Edmond, with the pleasure of choosing the sequence yourself from an à la carte menu.
